Pita Bread

Makes about 10 pita breads
  • 325-400 ml warm water
  • 1 tsp fast action yeast
  • 2 tsp olive oil
  • 600 g strong white flour, plus extra for rolling dough
  • 1 tsp caster sugar
  • 1 tsp salt
  1. Pour all the water into a mixing bowl and stir in the yeast until dissolved.
  2. Now add the oil, flour, sugar and salt
  3. Mix everything firmly and add a little water if you find the dough too dry.
  4. Cover the bowl with a wet towel and leave to stand for 30- 60 minutes to rise in a warm and dry place.
  5. Preheat the over to 240 degrees, and place an iron baking tray in the oven to heat it up.
  6. Divide the dough into 10 equal pieces and shape them into balls.
  7. Place in a tray and cover with a towel and leave them for about 15 minutes.
  8. Now roll them out to rounds or ovals about 5 mm thick.
  9. Remove the baking tray from the oven and place a couple of pitas on them. Return to the oven. Bake the pita for about 4- 5 minutes until they are puffed and lightly colored. They should not brown
  10. Remove from the tray and cool on a wire racket or basket.
  11. Tip: If the first ones did not puff up enough spray the remaining dough with a little water.
