This January I am try to cut down on the more calorie heavy foods and decided to share with you some of my favourite winter warmer recipes! This frozen pea soup recipe is made with ingridients from your freezer and is ready in 10 minutes.
I have served this soup at a couple of my dinner parties and it is always a hit. Its a nice soup to serve as a starter because its very light and the mint adds a fresh taste to it. It is also quite healthy for your purse as all it consists of is an onion, frozen spinach, frozen peas and fresh mint. 1 Pack of frozen pies
1 Pack of frozen chopped spinach
a handful fresh mint leaves
500 ml chicken stock
some butter for frying
salt & pepper to taste
1. Fry the onion in some butter until it is almost translucent
2. Add the chicken stock and frozen vegetables and cook for about 5 minutes
3. Purée the mixture in a blender or use a hand blender until it reaches the desired consistency
4. Add salt & pepper to taste and serve hot.
